Ingredients
For the mocha
Candied orange mocha with orange syrup, cacao powder, espresso, and milk.

Slice two of the oranges (about 1/4” thick) and set aside.

Add the sugar and water to a pan, heating on low, and whisking occasionally until the sugar is dissolved.

Add the orange slices in an even layer over the sugar mixture and turn up the heat until the mixture has started to simmer.

Keep at a low simmer for about 45 minutes, giving the mixture a stir occasionally.

Remove the slices from the syrup and set them on a cooling rack for a minimum of 24 hours.

Turn off the heat and add the juice from two oranges to the thick syrup, stirring until combined.

Grate the zest from two oranges into the syrup, bring to a simmer for only about a minute continuously stirring, and turn off the heat.

Let the syrup sit on the stove for a couple hours until cool, and then pour the mixture over a strainer into a container. Stir the mixture in the strainer until the syrup is in the container and a marmalade is left behind in the strainer.

Assemble your mocha with 1.5 oz orange syrup, 2 tbsp cacao powder, two shots of espresso, and 6 oz of milk. (You can also replace the milk & espresso with brewed coffee & cream to taste.)
