Flambéd whiskey caramel

Add the butter to a medium saucepan and melt over low heat.

Add the sugar to the melted butter and stir the sugar into the butter until fully combined and spread evenly across the pan.

Heat on low until the whole mixture starts to bubble - the sugar doesn’t have to be completely melted. This takes about 10 minutes (heat low enough so that it doesn’t burn, and do not stir!)

Add the whiskey to the top of the mixture, turn off the heat, and use a lighter to ignite the whiskey. Let it burn until the flames go away.

Move the pan back to a low heat flame and slowly add the heavy cream. Start to whisk. (The mixture may “seize” but will dissolve as it warms up.)

Bring the mixture to a boil and keep it boiling for about 2 minutes.

Turn off the heat, add the vanilla and salt, and whisk until combined.

Pour into a container and keep refrigerated between uses! This will last in the refrigerator for at least a month, but most likely longer. Enjoy!
